If let's say a rogue uses a bonus action to Hide but they can only hide behind a pillar that is 10 feet away from them, would that provoke an opportunity attack against a creature they were previously engaged with? I'm curious about this, as well as if the Hide action itself prevents opportunity attacks against someone using it.
Narratively, I can say the chaos of combat can allow people constantly switch positions, sometimes without other creatures noticing. But on a gameplay standpoint, I'm curious if it is intended for the action to provoke opportunity attacks or not.
As far as I know, if they can see you, you can't hide. That means if you are in melee combat, unless you are in complete darkness or your enemy is blinded, and/or the squares that you can move to without provoking an opportunity attack are in complete darkness, You will not be able to hide. Which means you must move out of reach to find a hiding spot. So yes. You must provoke an opportunity attack since you must move out of reach in order to hide. An exception would be if you have NOT attacked yet. Then you can disengage with an action, and hide with a bonus action (if you are a rogue and have cunning action). Action Surge would allow you to do this as well even if you have attacked, as you use your second action to disengage and your bonus action to hide (if you are multi classing rogue and fighter).
It sounds like maybe you think the Hide action "comes with" some movement, if you need to move before you can hide. It does not. In the scenario you describe, you can move. The enemy then gets an opportunity attack. Then you can hide.
In general no action provoke an Opportunity Attack, only moving does.
If a creature you can see moves out of your reach to go hide behind a pillar 10 feet away it will provoke an Opportunity Attack.
If a hidden creature that you can't see moves out of your reach to go to a different location while remaining hidden, it won't provoke one.
So its more about if it moves out of your reach while being seen.
Yep - the rules on Opportunity attack require a creature you can see moving out of your reach. If you are blinded, in a fog cloud, in darkness without the ability to see in it, or the target is invisible or otherwise heavily obscured, you don't get an opportunity attack at all. The creature doesn't need to be hidden to avoid an opportunity attack - all they need to be is unseen.
The only scenario where a character could use the Hide action to avoid an Opportunity Attack is if there character has the Skulker feat.
In this case if you are in dim light you can hide from an adjecent enemy because you are Lightly Obscured. Once hidden you can then move out of the enemies reach without provoking an Opportunity Attack because you are not visible to the enemy.

If they're an wood elf and it's snowing, they get the same benefit. Pretty neat.

Hiding does not provoke an OA. If you need to move away to get behind the pillar, that movement might provoke an OA.
"Not all those who wander are lost"
If they can't hide where they are, they can't hide. That pretty much answers your question.

Could the Rouge pc attack at range during combat move without provoking an op attack due to the range and hide as a bonus action?
Yes. That is rogue 101. Snipe and hide.

Yes because the rogue is attacking from range. You have to be in melee to trigger an attack of opportunity.
