I know you you can convert slots to points for later use and lose them on a long rest. But I want to use a warforged of elf since they don't sleep and never lose the points (assuming the info provided to me is correct). Now the PG says you can do this up to level 5. Now does that mean I can use them to cast a level 5 spell even if my highest slit is level 3? Sounds a little broken so I want to make sure
You are confusing Long Rest with sleeping. They are not the same thing. If you convert Spell Slots into Sorcery Points (SP) you don't ever lose those points until you spend them - it doesn't matter if you long rest or not or if you don't sleep or not. You keep them until you use them. However, you cannot ever have more SP than your Sorcerer Level. So if you're a 5th level Sorcerer, you can never have more than 5 SP at any time. When you complete a Long Rest, regardless of whether you slept during that Long Rest or not if you don't need to sleep, you get back any missing SP until you're at maximum.
If you use SP to create Spell Slots they last until you complete a Long Rest (again, it doesn't matter if you slept or not).
Characters can forgo taking a Long Rest. Characters that need to sleep will eventually need to start making Con saves to avoid Exhaustion while characters that don't need to sleep can forgo Long Rests without penalty for as long as they want. However, going without Long Rests will also mean you don't get any benefits from it: you won't get back your normal spell slots, you won't recover your spent SP, you won't recharge any once-per-long-rest features, you won't recover hit points or hit dice, etc. So there's no real point to keeping created slots - you may as well take the Long Rest and get your SP back instead.
If your highest spell is 3rd level then you're Sorcerer level is either 5th or 6th level. This means your maximum SP is 5 or 6. To create a 5th level spell slot, you would need 7 sorcery points. Since you don't have the SP and you cannot ever have more than the maximum at any time, you'll never have the SP to make a 5th Level slot. You will need to be 7th level or higher.

If you would like to abuse the Warforged's ability to skip sleeping, you may want to consider a Warlock instead. Since their spells regenerate on short rests, you can take 8 short rests while the rest of the party is sleeping.
There is no Hard rule about how many short rests can be taken in a 24 hour period, so it can get a bit silly if you use your extra time to cast spells like Animate Dead.

Since I got this idea from an idea about the coffeelock, we were talking tonight and it was mentioned that TPTB changed it so you have to sleep or take levels of exhaustion. But since warforged don't require sleep or take exhaustion, does that make it work?
