Creation spell, contrary to popular opinion may be completely overpowered. Unlike fabricate spells and the like, it does not state that you cannot make magical items with it, so use your imagination and utilize it to the fullest. Here are a few suggestions:
Make a crystal ball or Ioun stones, which last for 12 hours - an entire adventuring day.
Need some combat support? Make a Horn of Valhalla, use it immediately and have a bunch of berserkers to fight for you for an hour, same thing with ring of Djinni Summoning.
Ever find yourself wanting literally anything? Make a Ring of Wishes, and use the wishes before the ring disappears. (Maybe write them out, and consult a lawyer ahead of time to avoid monkey's-paw shenanigans).
Need power crystals for your guns, McGuffin, etc.? Make some full power crystals.
Need some light? Make a cart full of light crystal and keep and entire city or cave system lit for a night.
Need healing? Make a 5x5x5ft pool of healing potion, it lasts for 24 hours. This is roughly 124 000 doses of healing potion that lasts for a day. That averages to 868 000 healing even if you use the common version, distributed as you see fit. (Assuming a single dose of healing potion is 1 oz. and the potion is made of plant matter, which it should be considering it can be made with a herbalist kit.)
Two things to keep in mind: 1) you need to have seen something before in order to make it, and 2) need a small piece of what it is made out of for the material component (which is not consumed). Throughout your campaign, pay attention to what you have seen before and ask about what it is made of, and maybe file off some dust for later use. This spell is as useful as what the DM has thrown at you, or used for set-dressing.
The top of the [spell[creation[/spell] spell says "You pull wisps of shadow material from the Shadowfell to create a nonliving object of vegetable matter within range: soft goods, rope, wood, or something similar. You can also use this spell to create mineral objects such as stone, crystal, or metal."
Nothing there suggests that the item you make will have any attributes other than being made of either vegetable matter or minerals.
No mention of being able to create liquids, so potions are definitely out regardless.
But... it does allow a list of materials, and all those materials can in theory be made from antimatter. Think of antimatter as just a mirror of matter. I would say the real issue here is that the pc wouldn't have knowledge of antimatter.

Contrary to the above opinion, the spell doesn't work like that. 😊

There is no such thing as vegetable antimatter, and the spell specifies it must be vegetable matter. And even then:
"The object must be of a form and type you have seen before."
Since on contact antimatter and matter obliterate one another on contact, the character would have had to have observed it existing in a vacuum.
If it doesn't work like that, please tell me how it does work? By RAW it makes creates things made of vegetable matter, minerals, stone, crystal, or metal. If something is made of these things the spell should be able to make it. If I am wrong in the RAW, or if there has been a stated RAI I would appreciate it if you enlighten me on the subject.

You could make a ring if three wishes but it would just be the ring with no wishes or other magical effect. It would just be a ring. Same with your Horn of Valhalla. You can blow the horn but nothing would happen, other than it sounding like a horn
you can create the metal, but not the magic infusing the metal.

Eh, a power-gamer could still create anti-matter or something of approximate volatility
a purple wurm’s venom gland?
The venom gland is not vegetable matter, so can't be created.
Anti-matter isn't on the list of allowed materials either.

Fair, I was just working off OP, I hadn’t actually checked the full description.
