Is there a spreadsheet or any sort of list type of resource already made for reference that compiles Unearthed Arcana content that has made it into official books (and which books for reference), which have had multiple iterations, currently being worked on, and which have been left dead on the cutting room floor?
I haven't found something like that yet, so I'd consider creating my own, but I don't want to waste time if it already exists.
My main use case is that I allow UA in my games generally speaking but would like to remove those that have had later iterations or Official releases from my own reference logs, since they'd be redundant.
I have no idea. But i'm wondering why the UA is so limited on DDB. It's free content and official, so i don't know why so much of it is missing from the databases for character creation. I see enabling playtest content gives you a tiny bit of these, like owlfolk and draconic options, but that's all, not any of the other really cool stuff; changeling, shifter, warforged, and Minotaur races, revenant subrace etc. Artificer, Mystic Revised Ranger classes. LOTS of sub classes like samurai, knight, or theurgy tradition for wizard etc.
It's packed with content but don't know why it's not available to use here.

Because UA expires. It's stuff that's in beta, and WotC either moves it on to formalize it and publish it in a book (eg Minotaur, warforged) or they scrap it, saying it's not going to make it to a book at all or needs way more work (eg Mystic, Revised Ranger). When either of these happen, WotC requires DDB to archive it.
Just for clarity, DDB maintains UA as publicly accessible for a limited time. If you make a character with UA, that character and its UA features will survive DDB taking it off line. \
UA, while free, is technically not "official." It's playtest content, ideas being tried out on the market and to produce sizzle for upcoming products. The MtG Planeshift packets are also free but also not "official" and I don't think we'll ever see them on DDB (and I even have MtG content toggled on my builders). Sure some of it does wind up in an official product (at which point, you're supposed to buy it not presume you can just have it because it was teased in a UA). A lot of doesn't wind up in print, or does with modifications, etc.
All that said, all UA is archived at WotC, so if you really wanted to you can access the free content showing drafts of official content, abandoned ideas, etc. and homebrew some of it. Some features just don't integrated well with the DDB toolset, like the first run at CFVs or the Mystic character class (because you can't make classes).

The races you mention became official and you need to buy them or be in a campaign with source sharing enabled. When you do they appear for character creation.
