So I have an undead chainlock level 4 in a game I play. She has a Sprite Familiar.
The DM I am playing with really likes to target familiars, which is fine. I do too when I DM. It makes sense.
I am wondering though if I can counter this by popping out to shoot her bow and then getting back behind the PC. I figure a medium PC should give full cover to a tiny flying creature.
I wouldn't grant total cover because we're talking about creatures in motion; the sprite is exposing itself to being hit whenever it darts out, and whenever you make any motion you're potentially revealing it as well, so I wouldn't count that as total cover.
Half cover is reasonable, and maybe three quarters if you're being careful. I'd only consider total cover if the sprite spends its turn trying to stay safe (e.g- gripping your back so you're fully between them and any enemies at all times, and with the sprite making no attacks).

Yes? No? how would you rule.
