Sorry just a quick question I have looked but it’s not obvious to me where answer is. What is the point of the ability to not need to breathe, eat or Drink with grave touches in dnd?
Mostly its just fluff to make you feel more Undead-like. Its there to enhance your role-playing and storytelling.
There are some minor benefits. Not needing to breath is useful if you are underwater or at risk of suffocating like being strangled, not needing to eat or drink is useful if your DM actually tracks your food/water intake and rations for survival like in Out of the Abyss. You could avoid accidentally ingesting poisoned food or drink if you games are more cloak & dagger. Stuff like that.

If you don’t breathe, you don’t have to worry about gas attacks, you can’t drown, or otherwise suffocate. There’s lots of ways it can come up. It’s a pretty big deal.
Not eating or drinking means you won’t starve or die of thirst. There are DMs who hand-wave food and water, and in those cases, it won’t matter as much. But there are also campaigns where food and water are tracked carefully. In those cases, it’s very useful to have one less mouth to feed.
