1) The outcome of the last discussion was that they do require mundane ammunition, but no-one tracks it. Is this still the case?
2) The bow firing a normal arrow gives a plus 1 (that bit I am treating as fact), now the query - If you fire a +1 arrow (as found in Tales of the Yawning Portal, Sunless citadel) do you have a +2 strike? personally I can see no reason why not - archers you need to find a source of +3 arrows in your downtime :)
for 1. Talk to your DM but in general yes this is correct. if your DM decides to track ammunition they are actually following things more closely than many general tables.
2. No the enchantments do not stack. If you are using Improved Pact Weapon to get +1 from that invocation to make a bow with a +1 ability. It is only +1 even if you use +1 arrows. The way ranged Enchantments work between weapon and ammunition is the one that is strongest takes effect. So if you have a +3 arrow you would be +3 from your +1 pact weapon bow not +4. Or if you fire anything from normal to +2 from a +3 bow then it is always +3.

2 different opinions, given the source of yours I must conclude you are right :)
Thanks Dale
+X bonuses generally stack unless they come from two copies of the same source. For example, if two people cast Shield Of Faith on the same person, the net bonus would be +2, not +4. But a magic weapon and magic ammunition are distinct sources, so they stack. :)

Thanks for the clarification.

In fact, the bonuses DO stack, but the magic arrow loses its magic after it his, even if you're able to recover it. See Jeremy Crawford's tweet from the early days of 5E - https://www.sageadvice.eu/2014/12/05/arrow-1-bow-2-magic-bonus-stack/
