I still believe giving them Advantage on saving throws instead of straight up Immunity made them more interesting for both the players, and the DM, as you'd rarely ever use this as a "boss" monster that needs that kind of special protection. :/
I believe no. 2 on the "Ettin Interactions" table is an error, copy and pasted from the Gorgon stat block? Unless it means the Ettin believes that there is a Gorgon behind it, which could be a funny encounter in itself.
I personally like how they're immune to those conditions instead of just Advantage. As DM, I'd play it off as only one of the heads having one of those conditions at a time but the other one picking up the slack.

Statwise not much changed. I find it weird that they are immune now si ce you can probably for example, blind both heads at once. I will just rule otherwise if players are creative.
Giving disadvantage or prone with attacks is a nice lil buff.

Actually, the 2014 Monster Manual said "One head sleeps while the other remains awake". That means the heads take it in turns to take rests, so 1 will be unconscious and the other awake for the rest's duration.

The Ettin is immune because 1 head will act as a "meat shield" and absorb any effect that makes it charmed, unconscious, etc., while the other picks up the slack.
