Grasping weeds and vines sprout from the ground in a 20-foot square starting from a point within range. For the duration, these plants turn the ground in the area into difficult terrain.
A creature in the area when you cast the spell must succeed on a Strength saving throw or be restrained by the entangling plants until the spell ends. A creature restrained by the plants can use its action to make a Strength check against your spell save DC. On a success, it frees itself.
When the spell ends, the conjured plants wilt away.
Would this entangle "invisible creatures"? It would seem that the vine would feel a creature and try to grasp it.

Can the wilted plants be used for anything later, or do they just disappear after the minute is up?
Because that's like endless dead plant stuff you could use for compost or whatever. 1st level spell slot sure, but if you're in a desert? :D
So when its first cast, the creature has to make a "Saving throw" but on subsequent turns it can try and free itself with a Strength "check", as in Athletics and not a strength saving throw?

That is correct. The initial roll to avoid being entangled (restrained) is a Strength saving throw, but once a target is entangled, it requires their action and a Strength check to break free.
That's typically a bigger challenge than the saving throw to begin with, especially because it's not a specific skill check (like Athletics) where the target could more easily add their proficiency bonus. It's just a plain Strength check, so most characters won't get any proficiency in this. The main things that'll help you get out of Entangle are a Champion's Remarkable Athlete or a Bard's Jack of All Trades (both of which add half your proficiency bonus to this check), the Guidance cantrip, or other things like Luckstones that help checks.
The 2nd level spell Enhance Ability might be your best bet to break free by giving you advantage on Strength checks. Likewise, a warlock partnering with a druid can make it even harder for the target of their Hex to break out by giving the target disadvantage on Strength checks. In many cases, your best bet to get out of Entangle might just be to go after the druid's concentration.

How do people think this would this work if the characters fell of a boat, and got attacked by merrows? There is no ground to sprout from, and a random sheet of plants seems weird to me.
I own this in with content sharing, but my Ranger player still can't take it as a spell. Why won't the Tasha's expanded spell list offer these spells to the players? The player has 'optional class features' checked and everything.
It's just like HopeFox said, however an npc could use the help action to give advantage to the saving throw performed by the entangled creature, thus trying to cut the vines of the entanglement spell by using its help action narratively speaking.
Don't forget the fact that the area is difficult terrain! Paired with the other effect, even if the restrained effect doesn't pan out, it still makes it harder to get out.
Sometimes it's almost easier to push away the dense brush and vines and wiggle through the gaps if possible than to cut thick vines as they are extremely durable and strong, often requires multiple swings, because of that property, ancient Chinese built incredibly strong and durable(and very flammable) vine armor. Also, some vines can be under tension when entangled(even some naturally), can may even create snapping sound when chopped.(I'd say failed saving throws can tighten the restrain and increase tension as character struggles)
I ruled yes in my game but any reason it couldn't sprout from the ceiling and strap a creature there that is using a spider climb like ability?
I would say no because the spell said it sprouts from the ground.

I don't see anything that says this has to be used on an enemy/creature. Also I don't see anything that says the area you are in has to have other foliage in the area to use. Could this spell be used in a barren wasteland/desert in order to create difficult terrain in a space that has no terrain. For example creating a 20ft vine ladder or bridge for 1min as long as the vines originate from ground near the empty space?
