You choose a 5-foot-square unoccupied space on the ground that you can see within range. A Medium hand made from compacted soil rises there and reaches for one creature you can see within 5 feet of it. The target must make a Strength saving throw. On a failed save, the target takes 2d6 bludgeoning damage and is restrained for the spell’s duration.
As an action, you can cause the hand to crush the restrained target, who must make a Strength saving throw. It takes 2d6 bludgeoning damage on a failed save, or half as much damage on a successful one.
To break out, the restrained target can use its action to make a Strength check against your spell save DC. On a success, the target escapes and is no longer restrained by the hand.

A spell like this has material components that are not consumed. This means that the components can be reused. The components for this spell also do not have a cost indicated, so you can use a spellcasting focus or component pouch instead (these options can also be repeated as long as you have spell slots).

could you cast this spell at higher levels and get more of an arm or body? say using it at a 9th level spell make an upper bust like a susanoo???

Is it a concentration spell?
If there's one thing I like about this spell, while it cannot replace a spell like web being single (doubled with twinned spell) Against a low strength mage even if they misty step they are still restrained by the hand.
While Web states you are no longer restrained when you leave the area or break out.
So yeah, cast, run, take cover and laugh, as the necromancer gets crushed to death in the next room.
As a necromancer, you can easily reflavor this as a skeletal or zombie hand.
Fun random thing I've used this spell for: I created a hand shaped chair of stone cause I was bored while the rest of the party knew a language I didnt and were figuring out a puzzle in said language.
I'd argue that it's less an outright trap and more just one you need to think about a bit. If you're up against a mob of opponents, for example, you can place it in the middle of the scrimmage so even if the current target escapes, you'll have the opportunity to grab another before they have a chance to get away. Or you might be able to position it on a move so that the target has to decide between risking the save or having to take one or more attacks of opportunity getting out of reach. There will definitely be situations where it's better to drop the current cast of it, but with a little planning you can keep it going beyond the first passed save.

Is the damage considered Magical?
I have read that grappling rules suggest a medium sized hand could only restrain up to one size above... though the RAW doesn't mention "grappling" so I'd be interested to know what people think on this too. I think realistically anything thats huge+ would have the strength to resist the trap in the first place?
I would say sure, it can be used to restrain anything of any size, because the spell doesn't mention any size restrictions. The only exception would be creatures who have a general immunity to being restrained from some feature or other. This isn't grappling, so the grappling rules aren't relevant here.
Would the damage from this spell (and similar ones where an object magically created by the spell deals damage) be considered magical for the purpose of overcome damage resistance or immunity.
Personally I would vote no. To all intents and purposes you have magically summoned a tangible stone that you use to bludgeon things. The damage itself is not inherently magical, it’s just the physics of hard object vs squishy object.
