You choose a portion of dirt or stone that you can see within range and that fits within a 5-foot cube. You manipulate it in one of the following ways:

If you target an area of loose earth, you can instantaneously excavate it, move it along the ground, and deposit it up to 5 feet away. This movement doesn’t have enough force to cause damage.

You cause shapes, colors, or both to appear on the dirt or stone, spelling out words, creating images, or shaping patterns. The changes last for 1 hour.

If the dirt or stone you target is on the ground, you cause it to become difficult terrain. Alternatively, you can cause the ground to become normal terrain if it is already difficult terrain. This change lasts for 1 hour.
If you cast this spell multiple times, you can have no more than two of its non-instantaneous effects active at a time, and you can dismiss such an effect as an action.

I don't see any reason why it wouldn't work underground. The range of the spell is 30 feet, so that's the answer to the question of how deep it can go: 30 feet below the caster.
Would you allow the use of this cantrip to help with climbing vertical surfaces? It states that you can use it to form shapes or patterns in stone, and you really don't need a lot of extra shape to use as a half-decent handhold or foothold. This could enable climbing what to others might be a near-impossible surface, and since the effects fade after you've used it more than twice any pursuers would be hard pressed to follow. Obviously it's not Spider Climb, so you wouldn't be able to move at full walking speed, walk upside down, or have your hands entirely free without a good place to prop yourself, but it could add some extra utility to what:s otherwise a somewhat lackluster cantrip.
That sounds like a great use of the spell. I'd allow it and probably give inspiration to a player who thought of it.
Would this spell also work on the Warforged? They’re race is basically robots made for war, but because of a lot of advancements they gained life, and thus count as humanoid. They are made from steel, stone, and root-like cords but can feel pain and emotion. They are quite interesting and fun to play as, but a friend of mine has this spell and I was curious if it would work on the warforged race because of what it’s made of. Certain spells (like heat metal) won’t work on them because it only affects inanimate objects, so I’m curious if this spell works the same way.
So I'm playing around with the idea of a monk being raised by a sage and druids. Only knowing the most basic of magic. So if I could technically shape the stones into any shape possible for one hour. Couldn't I technically shape and harden them into a quarterstaff or clubs et cetera as long as their within the 5ft cube. I'm really new at this and never played a game before. But really like this idea if it works. I'll take all thoughts and opinions.
