Getting creative with it and ensuring the finished product feels like a finished product are, imo, the most important things.
I make my own resin dice (not very well) and it's a fun process. That said, I'm always adding more dice to my collection. I like to have character-themed dice; specific dice for specific characters, usually based off of color palettes, designs, class, and personality.
I'd suggest focusing on one material to start with. Resin is the easiest entry point, I think? But those cheap molds you can get on Amazon and Wish aren't very good and you will get a ton of air bubbles. You also have to be careful about your font choice, you can't legally use just any font you find online.
Another suggestion would be to offer custom dice orders. Pre-make some basic example sets of different techniques and offer them in a variety of colors.
Remember that price-wise you'll be competing with other major dice dealers who will probably be able to do the same thing you can do for cheaper and possibly better, so bringing something new and unique to the table is key.
