Just finished an AL session and was tethered to my cell phone when I added XP. Just got home, same device but home network and that XP is now lost. Not only that but the game state was lost. I had one 4th-Level spell slot level, everything else had been used up. Now the only expended slot is one 3rd-Level spell slot.
I had a similar issue the other day where nothing I did in the character sheet was being saved, but if I did it in the character editor, it did save. I restarted Chrome and it was still an issue. Restarted my computer and it worked after that. The site, however, was also significantly slower than normal so I'm still not 100% sure it was a client-side caching issue.

I am actually going to expand on filcat's statement to give my best guess at what happened and why filcat feels confident saying the sheet should not just be randomly removing data.
In the sheet we have two types of actions "hopeful updates" (spell slot usage, equip, unequip, attune, etc...) and "synchronous updates" (class leveling, adding items, etc..). Hopeful updates are triggered, and the sheet doesn't need a response from the server to keep going about its business. Sync updates require information back from the server to continue, so you see the "waiting blocker" component sometimes.
In the current sheet we don't do a great job of surfacing errors when they happened (ex: mobile device lost internet and failed to send action to server). And if an error happened on a hopeful update, your sheet could keep on seeming like it is working correctly, but any further hopeful updates would not send any actions to the server until you refreshed the page. This has been changed on the new revamp sheet to both popup an error when issues happen, and when errors happen it will keep sending further actions if it can. It is not recommended to keep going, the best action would be to reload the sheet and try again, but it technically could keep sending info.
So with all that said, my guess is the you lost internet, a hopeful update failed, which caused any subsequent updates to also not send. It would appear like all the subsequent hopeful actions successfully recorded in the sheet, but were really not sending any data to the server to be recorded.
I hope this gives some clarity into the most likely cause, and the upcoming revamp should really help surface these types of problems.
Until the new rev. is released is there anything I can do with my browser (Safari on iOS 11, sometimes teathered) to ‘force’ the information to be updated?

Thistle is the character.

This is a show stopper! The character sheet, and it’s ability to save information, is a primary function of DDB.
If it can’t even do that reliably…
Post here the URL of the character which had this problem, the team will need to know if they are to understand the problem.

Any word on what happened? It’s been a week. Not sure if it’s safe to update my character or not!
It is safe to update your character as it has ever been.
The most likely problem here is that you lost connection at some point, and all your updates (XP, spell slots) were not passed to the server.
