I've been playing around with making a new race option and I thought of a trait that allows the player to change their movement options after a long rest. Along with their regular walking speed, they would gain one of the following options depending on their choice:
Flight and hover
Burrowing and tremorsense
Swimming and water breathing
I'm having trouble implementing this in DDB however. I've made it an option with modifiers that appears on the character builder, but the player must modify their character whenever they want to make the change on a long rest. Alternatively, they can manually override the movement stats with the values of their choice. I would prefer a solution that automates the process directly from the character sheet, however.
What you seek is not possible with the builder. They will just have to settle for modifying the character to pick a different choice. It takes a few seconds at most so it's not that much of an inconvenience and still faster than manually adjusting each thing on a paper sheet.
