I'm really interested in making a bare hand attacker very similar to Inosuke Hashibira from Demon Slayer.
Based on the character, he's very duel weilding but also really a fist fighting with very low intelligence. Barbarian seems like a good class fit because of his lack of armor but I'm having trouble figuring out how to build a primarily fist fighter without going monk (because that feels a little too trained and spiritual rather than literally fighting whatever whenever).
Any help would be appreciated. Also open on race but varient human seems good?
Accustomed to rough-and-tumble fighting using whatever weapons happen to be at hand, you gain the following benefits:
Increase your Strength or Constitution score by 1, to a maximum of 20.
You are proficient with improvised weapons.
Your unarmed strike uses a d4 for damage.
When you hit a creature with an unarmed strike or an improvised weapon on your turn, you can use a bonus action to attempt to grapple the target.
Perfect for this type of character starting out. Plus it is just very useful in general. The unarmed strike damage doesn't scale as you progress levels like with Monk, but the damage increase is better than a flat 1 + STR
For Race, Variant Human is good. I've taken Half-Orc, Orc, and Tabaxi in the past for races which excel in hand-to-hand combat. As far as the Class goes, I prefer Barbarian because of the neat effects you get with the class features that sync up well with things like pit fighting and boxing, but I've been told Bard and Fighter also make for a good fist-fighter type too.
You can't look at classes by their class name. if you look at them as a chassis to provide mechanics you like, building cool character concepts is much easier. IMO, monk is the best way to go; just call him a brawler. Once you start looking at classes as a bundle of mechanics instead of a <insert class name expectations here> things get a lot more fun.

I give you, Bouncer Bob. Human fighter with Tavern brawler and Grappler, one level in rogue to get double profficiency in Athletics (roll againt a +11 to get our of his holds). And once he has you in his grip? All attacks at advantage....his favorite being to bash your head against a wall.
