I'm going to start this by saying that im looking into making a Peace Domain cleric of Ilmater and instead of carrying weapons i was looking at multiclassing into monk for 3 levels and taking Way of Mercy so i can punch and heal at the same time in between my cleric stuff.
However I'm curious what kind of multiclass options people think might be viable and asking people what kind of playstyle they think might work a little better. I already was looking at possibly just using toll of the dead as flavor of calling on their past violent sins to cause them pain and etc.

Peace is the most powerful domain clerics have in general for someone taking a 1-dip in cleric, because its L1 ability is utter nonsense, but if you want to main cleric and dip something else, other domains are better, like Twilight (notoriously overpowered once you lean into its CD).
Meanwhile, 3 levels of monk is enough to pick up abilities that need ki to function but not enough to have a lot of ki to play with. You'd be looking at 3 healing or harming punches per short rest. That's quite small. An example of a more ki-efficient monk subclass is Astral Self, but without DM fiat it's illegal to use the reach from it to deliver Touch spells, so you'll lose some synergy. Monk is also seldom combined with cleric because clerics don't need the AC buff from level 1 that badly, as a rule, and that's usually the number 1 reason to take a monk dip.
If you're really into this idea, I recommend inverting your build. Take 1 level of Peace Cleric and the rest in Mercy Monk. Believe me, that 1 level will put in a lot of work. Alternatively, if you want to be a punching Cleric, 1-3 levels of Fighter should synergize with you better than 1-3 of Monk.
