I'm thinking of making a Dwarf cleric for CoS, I can't decide between tempest or forge cleric. Anyone that's played either or both that have suggestions on which one would be better, or more fun?
It depends, do you want to do a lot of damage or be mainly utility and wear heavy armor and enhance weapons and armor.

Well originally do a lot of damage but I'm wondering if going utility and doing forge could be more fun for role play, would going for just pure damage eventually get boring?
I played a tempest through level 14 and really liked it. You get martial weapons and heavy armor, and have some really cool powers for melee. Domain spells give some real offensive punch, and I was still able to be the party healer. Just take warcaster ASAP, and you kick butt.
As a general rule, undead things tend toward Necrotic and Cold, and are repelled by Radiant and Fire. You may encounter a creature with immunity to fire during the campaign, but as long as you don't overspecialize, you should be fine.
My recommendation between Tempest and Forge depends on your DM's relationship with Magical Treasure. If your DM likes to run more difficult campaigns, then the ability to create magical and non-magical items could be extremely valuable. If your DM is more generous, then you may find more satisfaction in the Tempest Cleric's ability to pump out damage.
Either way, your Cleric spells are going to be your main feature, so whatever you choose, don't be tempted into multi-classing. Higher level spells are a lot of fun.
Tangentially, I find that I have more fun when I worry less about optimizing my characters. It's good to be thoughtful of the campaign, but having flaws and weaknesses often make the game more unique and memorable.

My biggest concern is im not sure but guessing a lot of things in CoS will be fire immune which would weaken a lot of a forge cleric
