I had this cool idea for a fighter subclass that would be all focused on attack speed and tunnel fighting. I also had this idea for some kind of dart knifes that they could use to fight at mid range. my brother thinks that it should be for rouges but I think that its more of a fighting thing. please advise.
What do you mean by attack speed? You get the same number of attacks no matter your weapon. So, dagger or greatsword, same number. I guess you could argue dual wielding gives you an extra attack, and is therefore a bit faster. But that’s not unique to any class, really. And tunnel fighting was a UA they abandoned years ago because it was pretty broken. So, I’m not clear on what you’re going for.
To try and answer the question, fighters will get more attacks, and with the thrown weapon fighting style, and maybe BM quick toss could throw lots of daggers. Rogues will do more damage per attack if they can trigger their sneak attack, but they only get one attack, two if they dual wield but even then can only SA 1/turn. Either of them could work, just depends on which angle you want to focus on.
FWIW, when I first saw the name, I thought, they sell knives? As the common meaning of monger is a salesperson. There can be an alternate meaning for monger, though it’s typically got a negative connotation — warmonger, rumormonger. It’s not something you want to be.
It depends on how many knives you want them to be able to throw individually per turn. I imagine multiple simply because you have two hands, but regardless…
If you want single knives multiple times then fighter.
if you want one or a fan of them per turn then rogue.
Actually, fan of knives sounds like a neat ability move like Warlock’s Hurl Through Hell. Maybe you can hold/juggle so many knives equal to a modifier and using Fan of Knives is using all of them at once for burst damage once per rest. I’m no balancing expert, so take my ideas with a grain of salt. Still… it could be fun.

Well, for more attacks, take throw weapon fighting style, since that gets you around the issues with drawing new weapons -- you only get one free item interaction per turn, so if you throw one, then draw one to throw the second one, you're standing there empty-handed. So thrown weapon helps you get around that. it also gives you bonus damage, which is, mathematically, kind of like rolling a higher damage die.
And then there's the Battle Master power quick toss that gives you an extra BA attack with a thrown weapon.
As far as boomeranging. Artificers have an infusion for returning weapon, and then there are some weapons that return to you, but they're pretty rare.
There's also the Path of the Giant Barbarian, which lets you throw most anything and then it instantly returns to your hand.
All very true, but maybe they could have some kind of chain attachments to the weapons so you could use them as flails or maybe a sort of wrist launcher.
Also, I could do something like the rouge's sneak attack feature where they can get an auto crit if they suprise someone from close range.

i could see it being a fighter with the hook having the ability to deal damage while realing the enemy for a second blow?
It could also be able to grapple or restrain but i can also see it being a rogue subclass and you can poison the hook or something?
