i've been playing a minotaur fighter this campaign and was just looking for some insight into what feats is should select for him. I've heard plenty about polearm master and the sentinel combo. I have already taken great weapon master at lvl 4. His stats are STRENGTH 20 CONSTITUTION 16 DEXTERITY 12 CHARISMA12 WISDOM 8 INTELLEGENCE 7. in the past i was happy to take polearm master and sentinel, and then take ASI'S for constitution until it reached lvl 20 and then capping off with the tough feat, but a couple of encounters with a poison dragon taught me the importance of resistances. My party doesn't have a cleric, but we have a paladin who is sometimes there, my big question is will the build above really be able to stick it out at high lvls or should i consider a different build that focuses more on survivability to make up for the lack of a cleric?
‘14 or ‘24 rules. If ‘24 and you’re worried about surviving, look at heavy armor master. The ‘14 HAM isn’t as good, and its value really tapers off after level 10ish. But ‘24 HAM is pretty solid. if you’re just looking for damage, PAM (with or without sentinel) is a good choice. And, killing enemies faster is a pretty good way to not get hurt.
I'm using 2024 rules and I've taken the battlemaster subclass. I'm trying to find a way to effectively fit in the heavy armor master feat. And still get constitution up to lvl 20. It can be done, but there aren't any great feats that lvl up constitution to pair with heavy armor master
You could always just take an asi. 1 point in con, then the other in wis so you can, as the above poster suggested, take resilient wis.
Besides that, I wouldn’t worry too much about getting con to 20. Even at 16 you’re doing really well. There is the aberrant dragonmatk fest from ‘14 which gives a point of con and a spell. If you’re in eberron, or with DM permission, that’s something to look at. Crusher boosts con, but the only PAM weapon it works with is quarterstaff. And skill expert you could use to boost con and pick up a skill and an expertise.
Is your build viable for high-level play as it is? Yes. PAM + Sentinel works great. If you're really worried about poison/elemental resistance, there's Gift of the Chromatic Dragon, or you can dip 2 levels into Bar. If you want HAM and Con 20, take ASI at level 12, HAM at 14, another ASI at 16 to get to 20.
There is also the possibility of Rune Knight. If you run into dragon breath and poisons a lot it's a good idea, if not stay pure fighter.
Explain me why Charisma 12 and Wisdom 8 while Minotaurs are well known for taking advantage in dungeons where they do need a clair sense to detect where is the outside. They need at least a Wisdom 12 or more to realise their keen senses on directions are working fine.
So, if you are trying to multiclass this Minotaur into a Pally, it's a nice choice, buuuuuuuut .................

I put the stats that way because I didn't know what I was doing at the time. This is only my third dnd character, and it is my first fighter. Not long after I created him I learned of the importance of a high wisdom score. At least there is some backstory reason for the high charisma. He is a gladiator and I play him like a professional wrestler
There is a feat form the Lord of the rings role playing book called hardiness. It provides the +1 con im looking for and provides some hit points. About half as much as the tough feat. That gets me 18 con with lvl 20 con HP. Then is be free to take whatever feat I wanted. I'm strongly considering gift of chromatic dragon, not just for the damage output, but for those resistances as well. That is probably the best blend of offensive control and personal tankiness I can get. Buty wisdom is still really low. I could take resilience or mage slayer as a defense against mind control. Either one would just give me an odd number ability score
I've heard the combo is incredibly powerful, is it really so much stronger than just using a greatsword or a maul
If you’re using the ‘24 rules, it isn’t as strong as it was. Under ‘14, PAM gave you an opportunity attack when someone entered your reach, which is 10’. Then, sentinel would drop a creature’s speed to 0 when you hit them with an OA. So they’d be 10’ away and unable to attack you (unless they also had a reach weapon, so something to throw, but you get the idea.) On your turn, you take your attacks, then step back 5’ and let them come at you again. It uses your reaction, so it did nothing about the next creature to approach you, and ranged weapons ignore it completely, so in reality, while strong, it was never as game-breaking as the internet seemed to think.
But, in the ‘24 rules, the attack granted by PAM is no longer an OA, so the sentinel power stopping movement does not trigger.

Maybe this is just a forgetful minotaur.
Forgetful with the Intelligence of a 7, sure..... but you should at least let this Minotaur not be so nerfed

I'm unsure what you mean by that. Are you saying the minotaur is nerfed because they can't solve mazes?

Also, what subclass?
I'm going to assume 2024 rules.
Stick with Polearm Master + Sentinel for control, this is the beating heart.
Taking the Resilient (Wis) feat shores up a vulnerability.
