The image that pops into my head when I hear greatsword is the ultragreatsword called the greatsword from Dark souls. And that makes it feel very satisfying to hit things with. How can I do the most damage possible with it as a fighter?
Actually, that gives a good opportunity for a character concept. Half-orc always keeps pace and hands covered, says their human, keeps people believing that. Despizes orcs.
Isn't a STR Samurai with Great Weapon Fighting style, GWM with constant advantage and rapid strike going to do more dmg then the champion orc?
If by "with constant advantage" you mean on three turns per long rest, yes. Those three turns will be amazing. But the Champion crits more often and hits those quasi-brutal criticals to roll an extra damage die.
I personally think the best way to destroy things with a greataxe is to go barbarian (reckless attack), but half-orc champion is probably a close second in terms of consistency.

Yup, bad word choice on my part. The point I was trying to make is that Champion's abilities are, for lack of a better term, "always on," so I suppose it's consistent in its inconsistency.

Max your strength. Take great weapon fighter and savage attacker. Also be a half orc and take orcish fury.
If you're a fighter, this is the best way to go.
Great Weapon Master is another good feat for you - take -5 to hit and +10 to damage.
