(Beforehand: I'm not set in stone for EK - but our subclasses are limited to PHB and XGE. Battlemaster also crossed my mind, but as I'm already playing one in another campaign...)
Okay, here's the thing: A few friends of mine are going to play Curse of Strahd - and it's a very small group. Currently we have one Celestial Warlock and a Blood Hunter (Profane Soul) - so we're 'lacking' a heavy armor user. (I also don't want to play Paladin because the Warlock intends to RP as Paladin.)
As we are only three players the DM said to give us a chance we all get to start at level 4, everyone gets 500 gold to spend freely *and* two magical items +1 (which can be armor, weapon, shield). For stats we all rolled and everyone is allowed to take the results of the highest roll, which would be 18, 15, 15, 13, 12, 10.
So I've been thinking about this:
Human variant, Dual Wielder Feat; taking Two-Weapon-Fighting, and instead of the level 4 ASI taking War Caster; as subclass Eldritch Knight.
For armor I'd spend 200 gold for a Splint Mail as well as 10 gold for a Shield (for "emergency tanking"), and as my two magical items I'd take a +1 Morningstar and a +1 Warhammer.
Stat-wise I was thinking about this: STR 18 DEX 10 CON 15 INT 15 WIS 13 CHA 12 (+1 for Int and Con due to Human Variant)
Concerning spells we're only allowed to take spells from the PHB, so I'm actually completely clueless what to take. (Maybe Blade Ward as cantrip, as well as Shield and Thunderwave for known level 1 spells...? As I said, I have no clue at all.)

Chill touch is very good, and will be a good idea for your campaign. Blade ward is another good one. For spells, shield and thunderwave are good first level spells. Also taking find familiar means that you can scout places without harming yourself. However, this is redundant of the warlock has taken pact of the chain. You could buy a diamond to cast chromatic orb.

Are you trying to tank, or do more damage. If you’re tanking, a sword and board build will give you more ac. And a different subclass could be better for keeping allies safe. I’m partial to a cavalier, good at forcing people to attack you, and if you pick up sentinel it becomes really hard for enemies to get past you. More so if you take polearm master, though if you go shield that limits you to a spear or quarter staff for a weapon. Also then you only need one magic weapon, and can put the other magic item into armor or shield, bumping that AC even further.
Or a bit outside the box, a tempest or forge cleric will get you that heavy armor, some healing, utility spells and some undead turning, which will come in handy in strahd, I’d think.
Chill touch sounds also quite good, so I might take Blade Ward, Chill Touch as well as Shield & Thunderwave. Not entirely sure about Find Familiar; the way I envision this character she'll likely be hotblooded and prefer a direct approach, I think using a familiar would likely be to refined for her to use.
Mostly intending to play as damage dealer here - the Blood Hunter already said that she'll be our tank. (She picked a Shield+1 and Half-Plate +1 for her magical items, together with her +2 Dex mod that brings her up to 21 AC if I'm not mistaken.
To be honest when it comes to fighter I always played Sword & Board so far, so I thought I'd try at least something out of my usual comfort zone with Dual Wielding here. :) Cleric in theory sounds good, but as I'm already playing a Cleric (War) in another campaign I'll probably not start another Cleric for a while.

For damage, great weapon fighter and great weapon master and you’ll hit like a truck. Personally I’m not a big fan of two weapon, it just feels like it should be more powerful than it is. Plus if you end up with a lot of bonus action spells you won’t take that second attack very often. My last campaign we had an ek two weapon fighter, my memory could be bad, but I don’t recall her using that off hand attack very often.

Personally I’m not a big fan of two weapon, it just feels like it should be more powerful than it is.
