The features are overly limited by use, cost, and sometimes both. The subclass is supposedly thematically tied to the teachings of bahamut but every feature seems to be more representative of chromatic dragons rather than metallics, or even gem.
the best thing about the class seems to be the elemental resistance that can make the party stronger, but the range is so small that it’s more of an invitation to get more PCs targeted in a single AOE.
the breath replacement for an attack is too weak and too expensive when paying the ki cost. The Proficiency free uses seems nice at first glance, but the fact that it’s free means it does any interact with the tashas features Monk Weapon/Ki fueled attack from tashas. Raw you can’t even choose to spend Ki when you have proficiency uses left if your monk weapon would be more advantageous.
the features this monk gets are also mostly features that other classes get earlier, those other classes have more uses of the feature, those classes probably also have more potent versions of the same feature.
the damage change effect for unarmed strikes at level 3 also largely made irrelevant due to the monks unarmed attacks counting as magical to bypass resistance/immunity 3 levels later from the base class.
It's like they don't play test with anything besides the PHB.
The unarmed attack damage isn't worthless. Occasionally you'll get an enemy with a weakness. But mostly damage is damage and it is pretty much useless once you reach 6th level.

Wings Unfurled already scales with your movement speed, or do you mean something else? You can use Step of the Wind at the start of your turn, so that it will also apply you an ordinary Dash action and your regular movement as well, for up to 180 feet of flying movement (with a base speed of 30) for only a single Ki point. That scales pretty well IMO, as flying is a pretty powerful ability, especially as you probably don't need the action dash most of the time so are also free to attack after flying to almost literally anywhere you want to be.
Also for a Dragonborn; an Ascendant Dragon Monk can only use their breath attack in place of one attack per turn, likewise for a Dragonborn, but at 5th level you'll have two attacks, so by being a Dragonborn you can use both a Dragonborn breath weapon and an Ascendant Dragon Monk breath weapon in the same turn, which is pretty neat. On that basis I'd say Ascendant Dragon Monk + Dragonborn is a decent combo as you end up with a pretty good amount of area damage.
Former D&D Beyond Customer of six years: With the axing of piecemeal purchasing, lack of meaningful development, and toxic moderation the site isn't worth paying for anymore. I remain a free user only until my groups are done migrating from DDB, and if necessary D&D, after which I'm done. There are better systems owned by better companies out there.

I hadn't considered the Ki-fueled attack.
