Im really not sure why but it seems like they are leaving monks out for mastery , at this point I don't think we should expect any monk improvements. unless there is something they are hiding up their sleeve.
I think it's more likely that Monks won't be in this UA. Jeremy Crawford mentioned there will be 5 classes in this UA. We know Fighter and Barbarian will be covered and seemingly the Warlock. So either the Monk, Wizard, or Sorceror will not be in this one. I'm betting the Monk will get their own.

Was Warlock confirmed? It was mentioned in the recent interview but the impression I got is that they're just not talking about the Warlock yet, which may or may not mean that it's in this UA. Feels like an odd one to group in to me?
Personally I'm wondering if they might be re-releasing the Paladin and Ranger UAs to add weapon mastery to these; not sure what the fifth class would be in that case.
I'm also curious whether weapon mastery might replace fighting styles; since fighting styles were tied quite strongly to the equipment you were using anyway, and could become obsolete if you gained a random weapon that didn't match, then it might make sense to just use mastery instead. It would make sense to release Paladin/Ranger with the existing fighting style feature initially if they weren't ready to drop the big weapon mastery update yet, then swap it out later. On the other hand, they wouldn't necessarily need to re-release them for that (could just have a note saying "any class with the fighting style feature instead has the weapon mastery feature").
Definitely sounded like Monk isn't going to be part of this one, but I think there's no reason to assume they won't gain weapon mastery; it would be a great feature for them to have, even if it's a more limited form (i.e- must pick specific weapon(s) to have mastery with, rather than all of them). Maybe Monk's getting one of the biggest overhauls and needs its own UA?
