New to D&D in general and about to make my first caterc character, but I'm just a bit confused. I foreve the exact order but I think Tiefling is +2 Cha and +1 Int, then I was looking at Least Tiefling who is also +2 Cha and +1 Int. So would my racial bonuses be +4 and +2 respectively? Same question with Aasamir and Variant Aasamir respective racial bonuses.
Some races, like elves, have subraces - this means that you select your race, for example Elf - this grants various abilities, such as darkvision, +2 dexterity, etc that are common to all elves - you then select a subrace, such as Wood Elf - this grants a +1 to wisdom. Numerous races follow this subrace method, like dwarves, halflings, gnomes etc.
Other races don't have subraces - they have a main race and then there are variants. For these, all of the features/abilities are fully represented by that race. Tiefling is an example of this, gaining +2 charisma and +1 intelligence. When you view the Tiefling page, the various different Tiefling races you see there are all variants and self-contained, for example the Levistus Tiefling is +2 charisma and +1 constitution.
This can be a bit confusing to start with, however the D&D Beyond character builder handles it all for you, presenting you with choices you need to make to build your character.

You don't "add" those bonuses, you just pick one level... so +2 CHA +1 INT for example.
