When Shifters shift they some HP and other abilities. Can spells/abilities like that affect the character sheet so that we can remember it easily?

D&D Beyond FoundersThe character sheet doesn't change dynamically like a video game would.
In the future, there may be the possibility to make spells and features dynamically adjust the stats of a character sheet, but for now that's not possible.
