Is there a reason characters can only have 3 attuned items? We are making sure not to stack belts, cloaks or anything ridiculous like that, but it seems a little silly that I can't attune my pearl of power, my cloak, ring of protection and wand of lightning bolt. Among other things of course. Any thoughts from the dev's on this?
Game balance. The more powerful items (like ones that give a spell slot, boost your AC and saves, or give you free castings of high level spells) require attunement to balance them against the others.
Also, it's the rules of D&D 5th edition set by Wizards of the Coast. D&D Beyond is just following those rules, given that they are not WotC they have no control over the rules in D&D.
If you are using home rules to allow more attunement, just make a copy of the item, remove attunement and you can then use it without needing attunement slots.

If there is ever a rules overhaul for 5e, I hope attunment gets some attention. Only three slot regardless of class or level? Uncommon items taking the same slots/ number of slots as legendaries?

That would be a departure from the fundamental rules of 5e with no published exception, which DDB has said they likely won't support. They have to stick to the core 5e rules

The artificer gets extra slots as it levels up.
