On testing with edge, chrome, firefox, opera, safari browsers on laptop (windows) and samsung smartphone the dropdowns work fine. So this is not a site issue.
Check extensions, VPNs, clear cookies/cache/etc.

In the Character Edit screen I'm unable to select dropdowns, and go through the options. I've tried both Chrome/ Edge.

I tried everything you listed! And... It turns out it was an issue with my wireless keyboard fob! *facepalm*
