Just ran a combat in DotMM with intellect devourers. One successfully got a Devour Intellect off on our cleric, which says that it should set the intelligence ability score to 0:
Devour Intellect. The intellect devourer targets one creature it can see within 10 feet of it that has a brain. The target must succeed on a DC 12 Intelligence saving throw against this magic or take 11 (2d10) psychic damage. Also on a failure, roll 3d6: If the total equals or exceeds the target’s Intelligence score, that score is reduced to 0. The target is stunned until it regains at least one point of Intelligence.
Our cleric got unlucky and the 3d6 rolled higher than his INT score. When trying to apply a score override to the character, DNDBeyond will not allow a manual override to set a score to 0. I know this is probably a really uncommon edge case, but I don't see why we can't customize the ability score the way we see fit.
Yeah they know. They set the ability minimum to 3 because that is the lowest 3d6 can roll, but for some reason they made it so you can't override abilities below 3 either despite the handful of monsters and spells that attack stats. And fixing it will take effort and they are already working on a ton of projects.

If I recall correctly, if a stat reaches 0, then the creature dies . . .

Not always. The effect that does the reducing usually says what happens (it is death a lot of the time).
