I never bother about weight or ammo count. Exact money and rations are only interesting at low levels. Components with gold cost are always tracked, since they are necessary to hold down casters.
If we wanted resources to really matter we would probably play an early edition or some OSR variant instead of 5e.
My games are low to mid on the resource management. Of the 5 that I've run/am running, 3 of them have gold for XP as the main/secondary way of leveling (combat, and sometimes travel, are the rest). So they have to keep track of the sh*t they're selling or gotta buy stuff or track their lifestyle expenses.
In my most recent campaign they're merchants/travelers on what's basically the silk road, traveling with circuit of other merchants and travelers. So they're selling things and I'm having them keep track of their ammo. In this world there's no non-human animal domestication/exploitation in the world's history, so the wizard is changing all the leather/feathers/etc components for his spells to other things.
Other than that, there's not much resource keeping.
