would a fallen aasimar vampire still take damage from the sun, and if so would it be the full amount or would the radiant resistance help?? I’m trying to find a great necromancer race?
Every race can make a good Necromancer. Using your assimar/vampire example I would say that sun damage ignores your resistance but other DM's may allow it to apply. my reasoning for the resistance not applying would be your Vampire "curse" specifically weakens you to sunlight so damage from that bypasses your resistance, almost like the sun had a radiant version of the elemental adept feat active at all times.
not sure if this post is still applicable but according to the Volo's guide a fallen Aasimar no longer is filled with light because it was replaced with darkness or shadows. If that is so, that mean sun damage would remain a factor for a Fallen Aasimar/vampire, or am I miss interpreting something?

There is no sun damage. I assume you mean radiant damage.
The subrace does not say anything about replacing Celestial Resistance, so Scourge Aasimar still have resistance to radiant damage.
For interpreting rules in general, the rules does what it exactly says it does, and no more and no less. It is best to excise and ignore the lore and fluff when reading the rules, although this is easier to do for some people than others.
For a Scourge Aasimar/vampire hybrid, assuming the GM is giving the vampire half sunlight hypersensitivity while keeping everything in place for Scourge Aasimar half, then sunlight will deal 10 radiant damage.

Woops, for some reason, had a brain fart and my mind is registering Scourge rather than Fallen.
But either way, dark and shadow is just flavor, fluff, and lore and they mean nothing rules wise, so you ignore it when you interpret the rules. Since none of the Aasimar have anything that replaces Celestial Resistance, all Aasimar vampire hybrids will take 10 radiant damage under sunlight exposure if the GM gives them sunlight hypersensitivity. If the GM gives the vampire half of the character vulnerability to radiant damage, then the vulnerability and Celestial Resistance cancel each other out in terms of radiant damage, and radiant damage will then just do normal damage.

If you want a vampire race to play check ou the planeshift zendikar and innistrad d&d supplements (https://media.wizards.com/2016/downloads/magic/Plane Shift Zendikar.pdf & https://media.wizards.com/2016/dnd/downloads/Plane_Shift_Innistrad.pdf) they both list a vampire player race, not as powerful as the monster manual version but enought o give some real flavour.
