What are campaign sharing slots? I'm assuming there are limits placed on them? What are those limits?
If you have Master Tier Subscription, you normally have 3 campaign slots where you can share content. Due to COVID, that limit has been bumped to 5.
If content sharing is turned on in a campaign, that means everyone has access to everyone else's database information (monsters, items, feats, backgrounds, etc) and compendium content, as well as character creation options when making characters in that campaign.
For example, if one player has the Dungeon Master's Guide, Player's Handbook, and Monster Manual; another player has Lost Mines of Phandelver and Dragon of Icespire Peak; and another player has Master Tier subscription and turns on content sharing for their campaign, everyone will have access to the DMG, PHB, MM, LMOP, and DOIP.

I think so. Each campaign can accommodate up to 12 people (1 DM and 11 players), so one campaign alone should be enough for your needs.
You can turn on content sharing on 5 different campaigns right now, so if you want to share with your extended family, friends, coworkers, and even strangers, you can put them into 4 other campaigns. You can basically share content with up to 55 other people.

I think there’s a slight misunderstanding. The 5 slots refer to having 5 different campaigns, and what you seem to be referring to are character slots. The easiest approach for character slots is to create a separate DDB account for every player (and the DM, of course): every player will then have 6 character slots without needing a subscription. Every campaign can have up to 12 characters join, so plenty more than you need for all 5 of your kids.
edit: to clarify, a master tier subscription will let you create unlimited characters, and you can assign those to your children as well. There’s no problem with the slot numbers either way. However, each person having their own account with their own character slots means that when you don’t need the subscription anymore you don’t suddenly hit the 6 character limit free accounts have and it’s just easier for everyone to be able to manage their own character sheets without needing to be in a campaign. Also, if you want to use the charsheet on DDB during the game, the same account can only be used on three devices at the same time. With 6 people involved, that would mean passing around tablets or phones or people taking turns at a computer. That’s not very convenient (though I don’t know the ages of your children or whether they have their own personal device either). If everyone has their own account to log in with, it saves on the hassle.
