Cool. So how do you go? Right now that waterfall plan had kind of been hampered by the dispel magic from the dead fish cleric. Your also srill getting attacked by a Demon Lord and yiur speed in combat for rowing is 15ft, while travel pace is 1 to 5 miles per hour while rowing. Potential for exhaustion on the high end or for long durations on the low end. I'd need to work that out.

If it gains on us (to 60feet), Sparhawk will hold out his holy symbol and yells at the creature while pulling out a huge great sword that seems made of the bones or teeth of some creature he has slain in the past:"I am Sparhawk, A Paladin of Marduk, and A Knight of the Ancient Pandion Order. You shall not pursue us!" (It is clear the paladin has no fear, perhaps he has faced enormous foes such as this before.)

Unless the target is incapacitated, it can avert its eyes to avoid the gaze and to automatically succeed on the save. If the target does so, it can't see Demogorgon until the start of his next turn. If the target looks at him in the meantime, it must immediately make the save.
Sparhawk assess the situation, “friends let’s land this boat and separate, lest this horror destroy us all. We can regather once it leaves this place.”
Kos will take the Dodge action and once they make landfall follow Captain Sparhawk's advice and scatter in different directions.
