Thomas is prone (Dis on ranged as well as invisible) on the peak of the building, so he can see all sides. If no one is actively moving in from any other side, and the only action is at the side with the bowyers, he will shoot an attacker, with Gamliel dive bombing the chosen target. He remains invisible even while attacking, unless his concentration is broken. (Does he need to stealth afterwards, while invisible? )

After his shot, he will scan all the other sides and approaches for anyone coming.

Being flat in the middle gives you a blind spot. The flatter the roof the further out the covered area becomes The house is about 60x60 and about 30' tall. So without doing any geometry i'd say you can't see anything within 30' of the walls.
Also you have to pick a direction to look or are you spinning around on your stomach?
Fire bolt- Shoot a streaking ball of fire towards a foe and deal a measly 1d10 fire damage. Use eldritch blast instead.
Fireball - Drawing magic from your inner reserves, you unleash a devastating nuke that explodes in a circle, hitting multiple enemies, and burning them to a crisp with a godly amount of 8d6 fire damage. Make your DM’s fights look like garbage. It’s also a nice way of TPK your entire party and have them triggered at you for the rest of the week.

Invisibility? What invisibility
There are a lot of permanent duration spells running that I've completely lost track of.
Could you all list them for me and I''ll put that list in my campaign notes for easy reference.
OOC: Sarah is concentrating on the permanent Greater Invisibility spell on her. This is instead of Darkness due to the cramped quarters. She also has Flame Arrows and Darkness made permanent which aren't running now and a +1 on Gramps.
Aleister will turn the table in the dining room over and block the balcony doors as well as possible; at least it should provide a stumbling block should any try to ingress that way. With the lights out he will blend into the shadows, crouched up on the ceiling, where the sofa abuts the angle of the wall closest to the dining room; making sure Spider Climb and Longstrider are up and running. ‘Limerick’s’ sheath has been prepped with Sluggard’s Ointment.
Thomas will face the side that is getting shot at, and send Gamliel to watch for other threats. He has a permanent Greater Invisibilty and Darkvision.

No, you have a class feature that allows you to attack twice as part of your attack action. You only have one action as part of your turn. Attacking is an action. Hiding is an action. Unless you have a class or race feature that allows you to do both (like Rogues get to attack and bonus action hide), you have to choose one.

You seem to have 4 permanent spells - limit of two
OOC: We had two from the time we first found the font of awesomeness and two from this last short rest. Or did you mean 2 total? If so, then it's Darkness and GI. Gramps will go back be a very mundane talking sword and an accident will occur to Sarah's quiver.
OOC - Ditto Thomas - if the max is two permanents, Thomas's will be to Flame Arrows and Greater Invisibility.

Because this is a very non standard game with low levels of magic I'm using your character level as the control for the magic I'm slowly adding to the game. These permanent spells are all limited by what level you are at present. Level/3 round down. There are no magic items but having a limited number of permanent spells does help with the power curve that underlies the regular game. During downtime you can make a different spell permanent and replace something you already have. Greater Invisibility obviously has more utility than some 2nd level spell.
