Skill Expert feat is set up wrong in DnDBeyond. You're supposed to choose from skills the character is already proficient in to get doubled as expertise. Currently it has you choose from skills *not* already proficient in and if it somehow includes one already proficient in (like say from background), it deselects it. Yes, I'm fully aware I can do it manually, but that defeats the damn purpose of including the feat in the ASI drop-down menu.

Skill Expert does two things regarding skills
You gain proficiency in one skill of your choice.
Choose one skill in which you have proficiency. You gain expertise with that skill
The current implementation of the feat on D&D Beyond gives you three drop downs:
The first dropdown refers to point one and lets you add a new skill
The second dropdown refers to point two and lets you gain expertise in an existing skill (including any skill you selected from the first dropdown)
The third dropdown is your ability score improvement

I am almost positive I do have the entirety. I have used the feature in the past with out issue. Im trying to find where to double check this. I do know that I have used it in the past though so I am pretty sure.

It's perhaps not a perfect representation here (just some quick element editing to get the point across), but what if the various toggle options from official sourcebooks had a collapsible information box that showed users what content was set behind each toggle? This is just using a modified collapsible that's already in use for things like spell descriptions when spells are selected within features.
Q: As an aberrant mind sorcerer, how does one go about substituting out the class spells on your character sheet? I can't see how:

Until the Beyond team get around to fixing it properly, you can create a homebrew version of the Aberrant Mind, which will allow you to swap the initial spells out.
Though I should note that I’ve not managed to find a way of doing so elegantly given the limitations of the system. My current version is very much a kludge but at least it works unlike the official version of the subclass.
This feature requires some significant changes to be made, which are likely being done in tandem with their planned feature overhaul. I imagine that yes, it's being worked on, but that there simply hasn't been a satisfactory solution implemented yet. And sometimes changes like this take time behind the scenes, for reasons that might not be obvious to the lay user.
In the meantime, Dawnsong's suggestion in the previous post is a good one: You can always just homebrew the subclass for now and replace the psionic spells with your choice of spells!

Unless you are a member of the Dev team, you cannot make that statement. Since I am not on the dev team either, I cannot tell you what they are actually working on right now, why they are working on one thing, and not another, or why something that may or may not be being worked on appears to not have been updated.
What I can tell you is, the dev team are working on what they are calling the "Generic Features System (Phase 1)". From what I've grather, once implemented, the GFSP1 will allow the system to handle a number of elements, such as swapping out the Psionic spells, having fully working PB-based scaling stat-blocks, and a number of other oft-requested features.
You don’t have to be a member of the Dev team to be in the opinion of how it seems like they stopped working of fully implementing TCoE. They stopped updating us here since Feb. That is a fact. And thus, an observation on our part. If they are working on other things, awesome. However, to say “Check the first two post of this topic to be updated on the fixes we’ve done,” only to find it untouched for 3 months sends the message that they have stopped.
I personally understand that they have multiple projects going on. All I feel should be done differently is making more of an effort to inform the people that buy their products expecting things to… you know. Just work. If they realized that it would be more efficient to incorporate the fixes for TCoE into a giant Total Overhaul as opposed to working on everything individually, a simple:

I ran into a problem, when I wanted to add some spells, that were able through the TCoE-book. I bought the players bundle, but as soon as I want to add spells like "enlarge" or "Phantasmal Killer" it isn`t even shown in the available spells list. So, how can I fix that? I activated everything and was able to pick up the subclasses and features from the book, but I am not able to add the spells to my list.

The spells originally from the PHB aren't technically added to the (whichever class you're referring to) spell list. You need to turn on the toggle for "Optional Class Features" on the Character Builder HOME section, then in the Class section, you'll have a new Optional Feature Manager area for each class, where you can checkbox the optional Tasha's features you'd like to use. "Additional (class) Spells" in your case. Then you'll have access to those spells.

It's being worked on at the moment, still. The very first post of this thread has all of the current state of things, including the following:
