There are plenty of official adventures out there, from Lost Mines of Phandelver to Storm Kings Thunder to Descent into Avernus; not to mention thousands of fanmade adventures on DMsGuild and other sites. But if you want something tailored to your player, there is always homebrew (custom adventures).
Maybe they are a woodland guardian for an elven or fey settlement or city? In the Forgotten Realms, there is the fledgling city of Sharandar for example. They could be heir to a noble house in the city, or perhaps just a humble scout? Perhaps goblins plunder little wood elven or pixie village multiple hours travel from the city, and the player is sent to rout the little pests and track them back to their hideout? Maybe the goblins kidnap one of their number in the raid, and the fighter has to rescue them?
You know what, here's an even more interesting idea. One that I'm currently writing myself, and might end up posting on DM's guild if all goes well. Darklings (from Volo's Guide to Monsters) had raided this particular settlement of elves and/or eladrin and kidnap a particular citizen or family. After the PC fights off the raid of the village, they venture deeper into the forest searching for their lair. They track the darkling kidnappers back to a hag's hut in the woods, perhaps defended on the exterior by thick walls of supernaturally thorn plants and a handful of twig blights. The hag's lair is within the trunk of a large tree, that winds it's way underground into a small dungeon.
This band of darklings think they've found a ritual that will remove their curse, and allow them to recover their true form. The unholy ritual requires the blood of the being who cursed their kind, this being Titania, Queen of the Summer Court in theFeywild. Since they know how incredibly powerful Titania the archfey is, they believe they can accomplish this magical marvel if they could spill enough of her descendant's blood. This eladrin family, they worked out, are indeed descendants of Titania and with the help of the hag, they prepare the altar for the sacrifices. Thankfully, the green hag, named auntie Estellga Warthide, has insisted on seeing her victims suffer first and has thus left them locked in a locked cell, the floor writhing with bugs and bones amongst the dirt.
Your eladrin player must bypass these exterior traps, fight their way past darkling minions; slay, persuade or bribe old Wart-hide, free the prisoners and face off with the darkling elder preparing the altar with a couple of his minions.
The green hag is, of course, CR 3, so if you had four players they'd all have to be level 3 to stand a chance against one. Likewise, the darkling elder is CR 2, so players be level 2. If you have only the one player, then that is a lotmore difficult. With a single player, they should probably start at level 2 minimum, and still replace a lot of monsters with CR 0 monsters. Starting at player level 5 is probably the what I'd recommend if you want to be able to toss multiple monsters at the PC at once, or if you don't want to exclusively use low-level threats. That being said, you can also give them followers or companions to back them up, either using official rules in the official 5e Essentials Kit or created with typical character creation rules and character sheet. Just keep in mind that D&D isn't officially balanced for 1 PC all, though it certainly can be done if you balance it right!
