Since creepers die after exploding, maybe their AOE damage can scale based off of how much health they have remaining when they manage to explode (like, 8d6 at full health, 4d6 at half health, or 2d6 if they have less than a quarter of their health. Maybe there can be a number of variants so that they explode with different damage types
On a similar note, it might be interesting to use rules for dealing damage to objects, so that like in the videogame players will want to upkeep their structures or weapons. The spell Wall of Stone could give a good estimate of how much damage a stone block could take before being broken.

If you want more of a dark fantasy vibe for your campaign, I personally recommend Giffyglyph's Darker Dungeons. It's full of optional rules you can add to your campaign to give it some teeth. The Active Inventory and Wear and Tear systems definitely give me Minecraft vibes.

Over Thanksgiving break, I came up with a bunch of new mob ideas. If you're looking for more, Minecraft Dungeons has a load of mobs that aren't in the base game, like yaks, Windcallers, and Vine Whisperers!
Soulfire Blaze: A blaze made of Wither Skeleton bones and Soul Fire that serves the Blighted Order.
Prismarine Golem. A deep sea golem that fires blasts of scalding or freezing water from its core.
Mimicube: Little, violet slimes that copy the first weapon they are hit with, and use it against their attackers!
Blaze Vanguard: A powerful blaze that protects itself with shields that orbit around it.
Life Creeper: A creeper that instead of exploding, causes plant life around it to grow super fast when it bursts!
Scorched One: A charred zombie that hurls cinders and explodes when killed.
Wandering Traders: Villager, Endermen, and Skeleton wandering traders that travel the lands with odd companions.
Here's one of the early stat blocks for the Soulfire Blaze! Feel free to constructive criticisim and advice:
The Soulfire Blaze sheds bright light in a 30-foot radius and dim light in an additional 30 ft.
Water Susceptibility.
For every 5 ft. the elemental moves in water, or for every gallon of water splashed on it, it takes 1 cold damage. Additionally, if a small amount of snow, about the size of a medium humanoid's hand, hits the blaze, it takes 2d6 damage.
Actions
Multiattack.
The Soulfire Blaze makes three 3 Soulfire Blast attacks.
Soulfire Blast.
Inherent Attack: The Soulfire Blaze shoots one Soulflame Blast, +6 to hit, range 50/100 ft., up to three targets. Hit: 10 (2d6 + 3) fire damage. After they hit, the target moves for half speed for one round. This effect does not stack.
I'll start work on more, but I got to run a game today, (this one, in fact!) so I'll probably just start the players off in the world, and then I'll come up with it along the way.
Edit: Seems that they didn't need DMs at my local game store today. Also due to the fact that the game store wasn't packed, I was stuck as a player. Still had fun though.
If I were running this, I wouldn't be able to stop myself from using modded stuff in this campaign as well, such as the Twilight Forest bosses, Crazy Craft bosses, Aether mod, ect. I would also recommend if your doing this to also take stuff from Minecraft Dungeons because of all the new weapons, armor, artifacts like the Corrupted Beacon, and the soul system.

Yeah, there's an enormous amount of unique mobs in the Dungeons game alone, and an infinite amount more throughout the world of mods. I'd suggest throwing in mobs that you think would fit the tone of your campaign. SRP Parasites for a horror campaign, Lycanite's Mobs for a more traditional dark fantasy vibe, and so on: If you can think of a theme, there's a mod with mobs perfect for said theme.

This is an awesome idea! Would you be willing to share your campaign content? I've been wanting to run a regular game with my kids and today one of them said it would cool to use their Minecraft mini figs, and it hit me that someone else must have done a Minecraft DnD campaign by now. I'm not an experienced DM so did a search to see if there was a fully adapted campaign, saw your post and have been lovd reading everything that you and the other responders on this that have posted!!
This seems like a really cool system! I’m particularly excited to see soul related things (soul fire, soul sand, etc.) as I was thinking of including it for the campaign after my next one! A more advanced enchantment system (instead of adding +number to the item) also seems quite useful for campaigns!
I can send you my campaign notes sometime, I apologize for not posting for a solid 2 years on here.
My email is 100xcharlie@gmail.com if any of you would like access to the campaign notes, it is a campaign that goes from Level 1 - Level 12 and has some unique homebrew. Uni has gotten me swamped at the moment but I'll try my best to respond in a timely manner.
btw phantoms are my favorite minecraft mob and i think it would be really cool, and fit your dark fantasy thing. a large batlike creature with luminous green eyes that attacks when you dont sleep, and more come every night until you do.

there could also be a corrupted beacon, maybe it could deal necrotic damage, and if you roll less than a 4 on 1d4, you would roll on the sorcerer wild magic table (edit: i just noticed that this is in dungeon masters only, and i've never dmed in my life)

This is amazing lol. I'm DMing a group and was looking to see if anyone had already made homebrew versions of the Minecraft: Dungeons 'unique' items because I wanted to run them as a part of the loot tables, and wanted to see if you had done that. If not, I'll probably do it myself.
the creaking and warden could fit dark fantasy or outright horror depending on how you play them

There will be a mechanic to build camps, houses, mines, and more. However I'm not letting my players build giant palaces or castles by themselves.
Still thinking how said mechanic might work, but it'll be there.

Wouldn’t the players have to have a burrowing speed?

That doesn't matter. Even if you haven't DMed you can still provide valuable ideas and feedback.
