So my players are coming to an end of the dungeon. I have lined up ideas for the final boss of the dungeon, but struggling to come up with stats or finding a creature I can reskin to give them a worthy challenge. I will also be looking for some help trying to stat out minions for it. My players are level 5, about to be level 6.
The end boss for the dungeon I have planned, is a 20x20 or 30x30 man eating plant creature. It is similar to a Corpse Lily but with more floral arrangements (leaves, petals, bigger stem, etc). It will be able 20-30' tall, have 4 tentacle arms attached to the stem and 4 root "arms" which will emerge from the group as needed to increase difficulty. The creature will be unable to actually move, instead being carried by it's minions/children. It should have blindsight of 60', as it has no eyes. I was also thinking it should have a devour ability if there's a creature inside it. Not insta kill, but something like xd6 damage at the start of the consumed creatures turn. A minor DC to get the creature to throw it up, like DC 12 or 15.
Minions/Children: smaller plant like creatures that are about 4' tall, similar style appearance, but with root appendages to move, and long 12' tentacle arms in which they are primarily used to grapple the target (creature, items, whatever), to feed it to the mother. These would also have blindsight, at about 30'. They should be a CR 1/4 max, as they will be an endless supply coming from "plant" created cave entrances as each one dies, or until players seal off one of the cave entrances. Their main objective should be to do a vine hit, then grapple check. Next turn, if still grappling a creature, move and toss to mother.

Inspirations:
Twig Blights sounds like a match for the minions, modify them to have 10 foot reach and you are good there.
For the BBEG you could re-skin and modify a Roper.
Hmmmm, a Roper is a great starting point! Just add another skill, maybe something like spores or what not!
