Yes, there's nothing preventing you from just letting your party be a bunch of jungle explorers and not actually worry about the book's main plot. I would caution you to maybe keep in mind that they are level one, and prepare encounters accordingly, but other than that, there is nothing that says they can't just wander the jungles and fight fun things without ever actually having to cross paths with the real plot.

That's also 100% viable. When I ran it, about the only thing my group stuck around the city for was a day of dino racing so that they could win enough funds to buy a pack dinosaur and then they skipped town.

Nice! I really haven't done a sandbox adventure. I kinda like that it's got a simple goal, stop the curse. I feel like a murder hobo campaign is what this can be. And I kinda like that.
You could also try starting them at whatever level they'd be if they had started at the book's start. That way you skip the boring intro and don't have to worry about balancing encounters or whatever

Hey, is it possible to just have my players go into the jungle at lvl1?
The time between arriving and getting involved in the plot can be an entire session.

like, what I was goin for was, "Hey guys! The plot of the adventure is as follows [plot] so here we go!"
I place them in the city and withing that session, they buy their goods and so on and head out into the jungle.
