Hm.. tracking a dinosaur, fighting a dinosaur, killing a dinosaur, taming a dinosaur, luring a dinosaur away from a village, surviving a stampede, causing a stampede, exploring an area built from the remnants of a large dinosaur, all those types of things are what I think of.
The party gets invited to preview some billionaire geneticists new island theme park but uh oh looks like somebody skimped on the perimeter fence and security systems! Now they need to survive long enough in the theme park to be able to sue for negligence.
Survival. Make them really have to use all their skills in a Dino infested area. Routes and bards need to help distract dinos so party can sneak through. Magic users scare off dinos, physical fighters need to fend some off, ect. Maybe have a huge dinosaur boss at the end, one that requires the party to use every weapon, spell, and item at their disposal
I guess it really depends on the setting and major themes of your campaign, are we talking a prehistoric campaign with more primitive hunter gatherer type societies or something more like Dinotopia where a more advanced society lives alongside dinosaurs? Or is it more of a lost world type situation where adventurers from a more modern world find themselves stuck in a location that seems lost in time?
I am currently writing a homebrew campaign and need ideas for dinosaur-themed trials to put my PCs through.

Have everyone roll to:
Dino racing?
Hunt the albino T-rex?
Steal eggs to raise dinos as mounts?
You could make them try and chase down a legendary dino in order to unlock something important in that campaign
