My uncle has been playing since the mid-70's. I am about to run Storm King's Thunder (SKT) and asked him if he'd like to join. He is familiar with pretty much all the old school official giant adventures and asked me if SKT is a redo of any of the older adventures. From what I can tell, it looks like SKT is an original story, but I am not familiar with the older adventures involved with giants.
Is anyone here familiar with both? Is SKT completely new?
Your uncle doesn't need to worry - the story in Storm King's Thunder is entirely new.
At a very superficial level, it may seem to be similar to the old school adventure Against the Giants, but the only real similarity is that both adventures use all of the different types of giants.
From experience, SKT is a much more interesting adventure, including a lot of amazing roleplay opportunities.
Against the giants, whilst fun, is very much about a group of adventurers killing their way through a bunch of giants for xp & treasure, then moving on the the next size of giant up and repeating.

In SKT you are going to have a good bit of time (particularly early) where the party is not involved in Giants. Also, I would recommend reading through it, then making a lot of changes to fit how you want to do things. Or at least, determine how your world is going to work. The early-middle portion is a wide open sandbox where the party can do anything. I'd encourage you to let them do anything, but feel the pressure of giants via rumours/talks in taverns/ruined towns and ultimately some encounters.
My only advice would be treat SKT as a world with giants on the rampage, an open sandbox, and then let your PCs make choices and see where that leads.
