first, i would reccomend setting a DC. this should be based on what the creature is, how rare it is and how poisonous it is
second, determine what food the players want to make with the meat and set DCs according to how difficult the food is to make in real life
third, give them alternating slight of hand checks and nature or survival checks during the cooking process, remember that if the meat is rarer it will have a higher DC
fourth, describe the aroma of the cooking monster, i would do this just to immerse the players in the world you have created for them
fifth, it's time to plate. is it a hearty aboleth stew or is it a big bullete steak? this should all have an affect on how it's plated.
if you look at the equipment, a pot that can hold 1 gallon costs 2 gp and cooks utensils cost 1 gp although you will need fancier equipment for more acidic and dangerous monsters like a gelatenous cube or green slime.
note, this is just how i would do it but in the end, it's all up to you
