The Monster Manual references Templates you can add to monsters, but I can't find them. I would definitely love to have something easy to make say a fiendish crocodile, or a Dire version of nearly any beast. Anybody have any idea where I can find them and how to apply them in my homebrew creations?

That's 3e or 3.5e, I think. D&D Beyond is a ********et.

That's... not true, at all. There are four, the shadow dragon, the dracolich, the myconid spawn, and the half dragon. They're relatively easy to add to a monster. There are also the race templates in the DMG, which can be added to NPCs.
