Well, there's already the Goliath and Firbolg races if you just want to have a larger player character. There's also the UA Giant Soul subclass for Sorcerer, which you could use to give players access to specific Giant skills and abilities.
Okay, well if you're not too worried about being perfectly balanced (lol or particularly useable in a longterm campaign), the simplest way to set them up would be to base them on a Hill Giant, since of the giant races they're probably the least bogged down by additional abilities and skills that would have to be balanced.
Its highest stats are STR and CON, so probably jut give the player version a +2 to both
They have naturally high perception despite their low wisdom, most likely to represent their extremely high range of vision thanks to their height, so I would give them proficiency with Perception.
Languages would be Common and Giant
The Monster version has a natural armor of 13... I would probably change that a Natural Armor of 10+CON Modifier
And most importantly they're considered Huge. This means they can't be grappled by anything Medium or smaller, any weapons/armor they use would have to be custom made and cost several times the cost, their carrying capacity is insane, and whatever other details come from being considered so large.
That's a fairly simplified Giant that could be customized by class to more closely match whatever type of giant you want to play.
I think this is one of those questions where the answer will seem more obvious once you have asked a more specific question. Ask yourself what exactly this race has to have in order to satisfy you. If the idea is just 'giant', then that sounds like a human with the Large Size trait. If that's enough for you than add that trait and take something off of the usual human template to balance it, or add a negative feature.
If it helps, Arcana Unearthed had a playable giant race, and they didn't have much in the way of rules to justify it.
