I got the random idea of doing a plant-based Artificer, and a botanist seems to fit the theme the best. I haven't fleshed any ideas out for the subclass specifics, so I'm wondering what the community might come up with to help me play with this idea.
A plant theme would certainly be interesting, but you'd need to think about what it can do first. The precedent with the subclasses revolves around them being able to create something they can use as their gimmick; so then, what would it make? Would it be a pet build? Some other type of summon? Some sort of alteration to yourself? What would it do in terms of action economy? Would it do added damage, or let them tank, or do something else? What you need to do is ask yourself what you can see it doing, and then you can come to the community and ask for feedback. Otherwise, there's not a whole lot we can give you other than "yeah, that might be cool."
I don't think I want to do another pet build. Maybe one that's a bit more on the tanking side of things since the current true subclasses hit the damage and healing bits. Maybe taking some elements from other classes/spells, such as having a 'form' that causes plants to grow in your area to make difficult terrain. Maybe something that works of Barkskin.

Well, the added spells should be fairly easy, just druid/ranger spells, entangle, restraining strike, so on
