your eldritch blast hits the poor sap on the floor, right on the back of his meaty neck. He grunts in pain. The goblin goes to attack you, Sirrus, Attack: 13 Damage: 4.
Meanwhile, the detective uses the help action again, giving Peyton advantage.
This is a tipping point of the battle, regardless of what happens.

Looking down on Peyton's body, riddled with bullet holes, the boss clutches the burnt gash on his chest, panting. He glances at one of the thugs. "Burn everything." He then takes the Disengage action, and leaps out of a window in his office, the glass shattering everywhere. The DC for avoiding the shards is 12, so the boss will roll a save: 10, to avoid 7 piercing damage. Also the fall for 10 ft does 2 bludgeoning damage to him.
Thug 2 and Thug 3 look at each other, before attacking Sirrus and Apa, respectively.
Thug 2 Swings his mace at sirrus: Attack: 8 Damage: 5

Also, when the boss jumps out the window, he manages to avoid the glass, but lies sprawled on the stairs outside of the window, unconscious. death save for boss: 20.

Apa deflects the thugs attack and smiles at the goblin“with your boss bleeding out now maybe you switch sides and help us. These drunkards don’t respect your talents.”
Apa swings at the thug attacking her Attack: 7 Damage: 8
Your blade unfortunately misses the thug, but you are able to reach Peyton, your touch healing the wounds and restoring the lost blood. Unfortunately, with how using the help action gives advantage by distracting the target, you cannot take that advantage, as the target is currently on the stairs, unconscious.
Thug num 1 will continue to lay on the floor. It is now Sirrus's turn.

(Sirrus is at 5 HP and can't heal himself fyi) Sirrus, on his last bit of energy, will once again cast eldritch blast on thug2. 21 to hit, 6 force damage.

The blast of energy hits the thug, square in the chest. The goblin, seeing that the boss is gone, bounces on his heels for a bit, before leaving. He says a word in goblin, that sounds like a goodbye.
Seeing that Sirrus is in trouble, the detective goes down to help him, by attacking the thug. 10, if it hits it only deals 4 bludgeoning damage.

Thug two attacks Apa, still mumbling about void panini's. Attack: 11 Damage: 8. He attacks again, jumping, like a mixture between a graceful pixie and a hill giant. Attack: 7 Damage: 8
The boss's chest is a slurry of blood at this point, and his greasy hair is unkempt. He rolls what may be his final death save: 12.
Thug number three attacks Sirrus, weeping, for some reason. Attack: 7 Damage: 7, and Attack: 10 Damage: 9.
Seeing as things are dire, and the world get's a little lighter, go ahead and level up. Progress to level three as your characters gain a new strength and will to keep fighting, from brandishing divine power in a sword, to unleashing all powerful magic to destroy an undead abomination, to putting down humanities worst, you level up
(So with my new HP, should I add what I gain to what I have right now, therefore healing a bit, or just increase the max and stay at what I'm at right now?

If you want to nock him unconscious then I'll consider him stable, if not he will have another failed death save from taking damage
(BTW he is laying in the standard villain defeated pose, with the arms stretched out and the legs straight)
Oh no he is a self professed criminal and detriment to society. She wants to remove him from the gene pool.
