Here are my suggestions. If someone wants something different, that's fine with me.
(Reminder that we hope the players for Tozer and Xilyrah will come back, but for now they are like Valthana was.)
Assignments. The modifier in the parentheses is for Survival, except the danger watch (which is Perception).
Navigator: Sarith with Stool assisting (since Stool has knows the cardinal direction to Neverlight Grove)
Danger Watch: Krizzbond (+2) with Xilyrah assisting. Xilyrah is carrying Stool. Beegred's passive of 14 kicks in because of his subclass.
Foraging for water: Derenil (+1), Rodolfo (+1), and Jimjar (0)
Foraging for food: Beegred (+1), Tozer (+3), Narstin (+5), and Eldath (+5). Food found by Beegred is doubled (ranger favored terrain).
Narstin has the party water needs covered with Create Water, but the extra water in the waterskins should be replaced every few days (fresh for stale). If we have a food shortage, then Rodolfo should switch from water -> food until the party is in good shape.
Guard duty and shifts (have an active PC on each shift, Perception in parentheses):
Shift 1: Sarith and Narstin. Narstin (+3) rolls perception with help.
Shift 2: Jimjar, Tozer, and Krizzbond. Tozer (+3) rolls perception with help.
Shift 3: Xilyrah, Stool, Rodolfo and Eldeth. Eldeth (+5) rolls perception with help.
Shift 4: Derendil and Beegred. Beegred (+3) rolls perception with help.
I'd guess "yes" for the light. Krizz is more active than Valthana, after all. And with most of the party having disturbing nightmares and headaches, I imagine more Light would be welcome (even though it doesn't have a healing effect).

Yes, 250 gold worth. 5 gold per day (per 8 hours) of progress.
I'm doing this in my home game as well. I ruled there that 80 gold (of progress), you can start to understand, but not read, write or speak. At 160 gold (of progress), you understand spoken undercommon well, read poorly, speak poorly but can't write. And at 250, you can fluently read, write and speak.
EDIT: Eldeth, Jimjar, Sarith and Derendil speak undercommon.
That's an interesting concept if maybe a bit expensive IMHO - but then again many of my characters have never seen 250 gp let alone have it to spare to learn a new language.

The above discussion pertains to crafting, or in this case, learning. I believe I explained the crafting rules already somewhere, but here's a refresher:
You are able to craft during your downtime. To do so, you need to obtain materials and then spend time crafting. Each day (8 hours) of crafting, you make 5gp worth of progress towards the listed value of the item.
In Rodolofo's case, he is learning instead of crafting. Somewhere in the rule books, it says that learning a language from an instructor costs 250 gp. The materials in this case is a teacher. Assuming Rodolfo can convince someone to teach for free, he only needs to spend the time. He is not actually spending gold.

Often the things you can craft are not great compared to what your characters already own/use, so no one bothers. However, with this module, the characters start with almost nothing and have to scavenge, find or make what they need. It's better to craft crappy stuff and have something than have nothing.

Note: Krizzibond is blind in darkness. Will you be casting Light? If not, he will have disadvantage in darkness.
