Here is the writeup on Wing Attack... Wing Attack (Costs 2 Actions). The dragon beats its wings. Each creature within 10 feet of the dragon must succeed on a DC 22 Dexterity saving throw or take 15 (2d6 + 8) bludgeoning damage and be knocked prone. The dragon can then fly up to half its flying speed.
So the dragon would indeed risk opportunity attacks if they use this, as it does not say anything about moving without causing opportunity attacks. As the gray dragon would not be able to move far enough with the wing attack, to get out of the wolve's movement range, they would still come after him, and attack him still. Also, as Tangy is not being attacked by 20, he can indeed use his legendary action at the end of its turn, but would not be in melee with any as of yet. He would not move far enough though to be out of the wolve's movement, so would still be the second choice to attack if the gray dragon goes prone. The wolves will not fall from going prone, as they can hover. They would need to use half of their movement to get back up though, so that may be an issue with closing with either of your dragons after the wing attack. I'd say any prone ones would not be able to get to Tangy, as he is not as close as the gray dragon Yuno is riding. So any that go prone would go after Emmy if the gray goes prone from a bite.

We'll say that, 'yes' the gray dragon can grab one, but he will be holding it with his claws and mouth. He cannot make any attacks, including a wing attack, while holding the wolf.

She'll use her bonus action to use Second Wind and regain 14 HP. "Whatever he does, he can't kill me permanently," Honor says through gritted teeth. "But I don't know where I'll come back, since we're flying over nothing. Don't feel obliged to stick around if I don't make it, Emmy."
She'll use her two attacks to attack the giant with advantage (since he attacked recklessly). Since she's actually in melee she'll use her +2 morningstar.
Attack 1: 23 Damage: 13
Attack 2: 34 Damage: 17
Then she'll action surge and attack twice more:
Attack 3: 34 Damage: 16
Attack 4: 25 Damage: 14
Then she'll direct Emmy to disengage and fall back towards the castle. Emmy will use her action to disengage and beeline for the castle, using her full movement. She'll use one legendary action to use a Wing attack to move further, and will do a tail attack if anyone ends up in range, but she's trying to avoid combatants for now, so I'll only roll those if necessary.

18 radiant damage (or half if he passes the DC 21 WIS save). I'll wait on the actions.
