(Also, not a vote just considering input. Your stated reason is basically my thinking when I started rolling (which I didn't initially). I don't want to consistently give the best result and then get surprised players when they don't get the result they expected. But if I gave known results you'd all use skills like actions on every turn. Maybe I think about this too much.)
(i think you should create a few scales of things to roll ... compared combat and conversations intimidate extremes would be different. that way your doing tech both things creating your own and rolling to keep it fair)

I can help with the tables, but I would base them on the 4e skills as they did have their strong suit... combat tactics. That should cover most, not all the 5E skills.
(I never played 4e. When it was new I couldn't find a PHB. Only a martial handbook and an arcane handbook and such. And even when I flipped through it was like pages and pages of abilities. I liked 3.5 and Neverwinter Nights. So 4e was a shock.

Along with my anti-stalemate plan I'll introduce in this fight once I get Eldin's initiative. So you guys won't have to give up tactical position to advance the fight.)
I will not keep this hidden. I was very dissatisfied with how the fights played out. However, It was still fun and I look forward to future rounds. I do hope we can improve as to avoid some of these situations in future fights. (I will number these so that we can hopefully discuss them OOC before/during the next fight.)
In round one both players were put in a place where for anything to happen one of them had to make a tactically suicidal option.
I think there should be some sort of incentive to please the crowd. In the end, we are gladiators, not pit fighters. We fight for the crowd's entertainment, not for first blood/death. They will get bored if rounds mostly end in stalemates.
This begs the question of how much of what we do should be PvP vs Roleplaying PvP.

All the rounds were plagued with extreme dice rolls both ends of a spectrum with little action in the middle.
Its D&D it happens, the more we roll, the less t will happen. these sort of extremities occur.
Has anyone brought up the idea of a crit success/fumble table? I would both love and hate it personally. However, I do know that the crowd would love it. This would not really change much, it would just make whatever happens more interesting. When I rolled a one in the third round it felt lame, If I proceded to fall to the ground, or drop my sword It would have at least been super memorable and potentially the kind of thing that could have others laughing at me for rounds to come. As it was, It was rather uneventful.
D&D -and especially 5E- is not designed for PvP.
I think it is a ton of fun, however low levels are a pain as most fights will be one or two hits to kill. One crit. This gets better at lv 2 and again at lv 3 as HP gets out of 1 shot range, at least for standard weapon attacks.
Have we considered mixing it up with some PvE rounds, perhaps a solo monster fight, a team event against beasts, or even a solo skill act to break up the rounds?
I don't know, It's a great community you guys have built here, and I would love to see it diversify from just the fights.
I will also ask if it would make more sense for us to run parts of this in different threads, or even something like slack, or discord. It may allow us to keep conversations separate. Personally, I like this idea the least of what I have said so far, but Its just an idea so I am throwing it out.

Point 1 I agree. All future fights are getting a victory condition outside of defeating your opponent.
Point 2 is mostly an issue with low levels. I decided early on that every victory would earn a level as would two losses cause I expect things to change dramatically from level to level and I couldn't even decide on a good level to hold players so we just get all levels... Eventually.
I bet Josias enjoyed your fumble. But you don't know Lairin like the other players do. I'm reluctant to do fumble penalties beyond description.
Point 3 I'm not so sure. I know its not perfectly balanced but it actually seems pretty good for PvP so far. As you said though extreme dice particularly affect level 1. You can basically all one shot each other at first level. My solution was to have 1 on 1 fights be best of three at level 1. As you saw its still dependant on the dice but it gives you a chance if you get the short luck first round. We had a 2-v-2 when I had a flood of players. One round, since double players meant double hp, less instant loss. That was actually a surprisingly dynamic fight.
Your last point I'd thought about, but I think the fighters like to see the spectators comments together with the thread. Though if I get too many players and I need to run fights (more) simultaneously it may help to add a second arena thread.

(Once Klong wins 19 battles we'll start having Dragon Ball Z styles matches. With 11 attacks per turn, between rapidly flying opponents. Casting earth shattering AoEs and everyone will be unphased by the devastation... except the people in the stands who will be incinerated. That's a problem I haven't given enough thought. But I've got time.)
With all that said I am curious when does the next round start?
(The next match is in initiative. Between Josias and Eldin. It'll start when Eldin gets in. After that I've got to get Klong in a match, but based on pms that's going to be a big fight. I'm thinking I'll sneak Zævrt and 'Ladybug' in and run the match at the same time as the current fight. Depending how long the level-1 match runs will effect what I do for Klong's match.)
(a megacrag like they had on nickelodeons guts. add in monsters with climbing. add in things like bridges ziplines traps and animals makes it super dangerous.
also on the same lines is the monkey bars style course that would have rope bridges hanging rings one foot ledges over some kind of water hazard.

(We've had a couple npc fights and a monster battle and more will come.
Victory conditions I've got in mind are:
King of the hill: after X rounds, staying within 10 feet of the center of the map for Y rounds wins.
4-Control Point: from the start of the match, 4 flags, stay within 10 feet for 2 turns to capture, capture all four to win. (Anti-king of the hill)
Aggressive opponent: every X rounds add a monster, it will attack on site. Changing the battlefield dynamic. (Pro-king of the hill)
Lethal opponent. X rounds in add a big baddy. Too strong for you to defeat, run away or be destroyed. (Anti-king of the hill.))
