If you use the Simulacrum spell to make a copy of your familiar would it copy it exactly except it would have half as many hp... so the bond with it as your familiar is also copied and you now have an extra familiar, costly method though for an extra familiar.

You can't use Simulacrum on a familiar. Simulacrum only works on Beasts or Humanoids - and Find Familiar specifically says the creature summoned becomes a Celestial / Fey / Fiend instead of a Beast.
The spell says "You gain the service of a familiar, ..." and thereafter lists properties in terms of the familiar without specifying if it's the spell granting the properties or if they are properties of the familiar creature. (example "While your familiar is within 100 feet of you, you can communicate with it telepathically.")
On the other hand the sentence "You can't have more than one familiar at a time." strongly suggests it would fail; however, it is unclear how it would fail. The following clarifying sentence only talking about the spell Find Familiar.
On the other, other hand; there is a spell Flock of Familiars (Lost Laboratory of Kwalish), it breaks the strictest interpretation of the one familiar limit mentioned above.
RAW: IDK, RAI: most probably no.
I would Homebrew an up-casting
At Higher Levels. When you cast this spell using a spell slot of 2nd level or higher, you conjure an additional familiar for each slot level above 1st.
* (10 gp worth of charcoal, incense, and herbs that must be consumed by fire in a brass brazier per level of the spell)
Note: The Symbol spell is Abjuration so Simulacrum being Illusion shouldn't be a problem.
Mask. You change the way the target appears to spells and magical effects that detect creature types, such as a paladin’s Divine Sense or the trigger of a symbol spell. You choose a creature type and other spells and magical effects treat the target as if it were a creature of that type or of that alignment.
The simulacrum is already under your control. You don't need to even copy an ally, the simulacrum is just a copy of them, not them, it is a servant and you're in control of it.

It is apparently so hard to program Aberrant Mind and Clockwork Soul spell-swapping into dndbeyond they had to remake the game without it rather than implement it.
Note: The Symbol spell is Abjuration so Simulacrum being Illusion shouldn't be a problem.

That's not how magic aura works. Simulacrum doesn't detect creature type, so there's no interaction between these two spells.

Even if what Emmber said wasn't the case, simulacrum would not copy special properties from magic cast on the creature.
