Can a player use their action to Dodge and their bonus action to Hide on the same turn?
(Say a Rogue of 2nd level or higher.)

"A rightful place awaits you in the Realms Above, in the Land of the Great Light. Come in peace, and live beneath the sun again, where trees and flowers grow."

"Run thy sword across my chains, Silver Lady, that I may join your dance.”
Yes, a Rogue can do both, or a Monk using Patient Defense... they're both normally full actions, so as long as the player has some ability or feature that allows them to do one or both as a bonus action, they can still do both in a turn. There aren't too many benefits of combining them... Hiding alone is usually more than enough defense, but if, say, they try to hide first then roll poorly on their Stealth Check, it might make sense to Dodge after. Or if fighting an enemy with a lot of AOE Dex-Save attacks, it might be worth it to Dodge and get advantage on avoiding the damage, but I'd imagine any real benefits from combining the two would come up very rarely.
So it is logical to assume that a thief retains all the benefits related to what he can do during the bonus action and thus also a sleight-of-hand... right?

Right a Thief's Fast Hand feature lets it use Cunning Action as a bonus action to either Dash, Disengage, Hide, Use an Object or make a Dexterity (Sleight of Hand) check, use your thieves’ tools to disarm a trap or open a lock.

Yes, as long as their action economy allows it as with rogue cunning action.
As pointed out before: Rogue
Action = Dodge
Movement: as is
Cunning Action: Hide
Monk with Patient Defense:
Patient Defense = Dodge
Movement: as is
Action: Hide
